Hey, y’all heyyy! So if you’re following me on Instagram then you know I’ve been raving about Stuffed Zucchini Boats for a while now. I made them about two weeks ago and so many asked for the recipe. So I decided to make them again and this time I remembered to have my camera so I could document how I made them. When I tell y’all these things are so good, OMG they are good. I’m not a zucchini lover but I do love me some zucchini and squash mixed together.
Anyhoo, I saw one of my favorite bloggers, Caitlin show these on her Instagram stories and they looked so delicious. Then it clicked in my head that I saw them on Pinterest prior to that and said okay it was meant for me to make these. I’m glad I did because I am hooked. Even my husband loves them. It is super easy to make and I think you’ll like them as well. So here’s how I made mine:
The ingredients I used were (everything we bought from H-E-B)
- 8 fresh zucchinis
- A pound of ground beef
- Chunky spaghetti sauce
- Seasonings
- Thick shredded cheese
You are more than welcome to add extra stuff but those are the basics that you will need. I started off by setting the oven at 425 so that it can get hot quickly. I love cooking them at this temperature because it cooks faster but also they will not burn at this high temperature. Next, you want to cook your ground beef. Make sure you cook it thoroughly so you’re not eating half-cooked beef. While the ground beef is cooking, start prepping your zucchinis!
What I like to do is chop the zucchini in half straight down the middle. This is a task because you want to make sure that it is perfectly even. But realistically, it won’t be perfect so do the best that you can. Next, you want to use an ice cream scoop to shape the zucchini internally like “a boat”. Get it? Zucchini Boat? *Slaps Knee* I scraped about two-layer off of the inside and it gave me the perfect shape. I know some recipes say to scrape a lot from inside but I still want the healthy benefits from zucchini lol so I leave a good bit in there.
After that, add the spaghetti sauce to the ground beef. Personally, I love using the chunky spaghetti sauce because it comes with onions and etc inside already. If you don’t have or use that kind, then you can add your own onions, peppers and etc in the sauce. Please be careful with the sauce because it starts to pop everywhereeee!! I got burnt a few times but it was worth..Lol okay maybe not!
After you’re done adding the sauce, you can add some cheese and your seasonings into it to add extra flavor to it. Next, it’s time to fill up the boat! You can use whatever spoon you would like but make sure to fill the boats from beginning to end and fill them up with as much as it will allow! After filling the zucchini boats, add your shredded cheese on top! I like to cover the sauce/boats with tons of cheese so I recommend doing the same!
Once you’re done with that, it’s time to cook them! Put them in the oven for about 30 minutes and voila! They are complete and ready to eat! I absolutely love them and they are a nice healthy meal to eat! It reminds of chicken parmesan without the chicken. I love them and I hope that you’ll like them too! Have you tried these before?
